Fresh Pineapple upside-down cake

OK get a FRESH cored Pineapple, grease an oven safe fry pan, cover the bottom with brown sugar layout sliced pineapple and marischino cherries then dot with butter, imgp0472  mix box cake yellow i’d say according to package then pour on top of prepared pineapples. bake as  directed. Cool 5 minutes and then invert on proper size plate, enjoy ! warm or cold imgp0474

Vita Nova

Well,  Let’s see if I can do this blog thing again. I see it’s been nearly a year and two years prior to the most recent prior entry. We got Megan into a house down the road with her BF ward. I rebuilt a bench for their yard today. Steve dropped by to help but I had it done. His sister Marlene needs computer help. I’ll tend to it Sunday.  Fixed a leak under the kitchen sink today ’bout the third or fourth time I been under there in a week or so. Vacuumed a lot with a vac I got from Tom before he split from his house. Just playin poker now,  had a slight winning streak lately. Read the kids a berenstein bears book and a bear in the big blue house book before bed. Let them add vampire blood to their spaghetti and eyeballs and they both got TWO ice cream cones and helped me vacuum.

Blueberry walnut crumb cake

This is a simple delicious no clean-up !! recipe !
you need one heavy duty ziplock bag a piece of parchment big enough to line the cake pan and a piece of wax paper

ok on parchment lay out the dry ingredients

2 c flour
1 t baking powder
1/2 t salt
1 t cinnamon

mix them together some I used a plastic knife

in ziplock bag break 2 eggs and blend with hands outside of bag until frothy add 1 c sugar mix well with egg then add 3-4 T oil and about 1/3 c milk and 1 t vanilla to bag mix well with hands outside bag dissolving sugar

ok now add dry to bag(you may need a helper to hold bag)

mix things gently here until all is incorporated

add a 1/2 c crushed walnuts

line cake pan with parchment, cut ziplock with scissors and empty contents into parchment lined pan spread evenly

cover top of cake with fresh blueberries about 1 c

crumb topping : on wax paper mix 1 t cinnamon 1 T each of butter,flour and brown sugar, I used a knife to cut it all together. Spread crumbs on top of blueberry jeweled cake batter. bake about 20 mins at just under 400, enjoy !

I spent this last day and a half in Benzie and Manistee counties on a whirlwind tour of of places my brother loves. It’s a beautiful part of Michigan(which I know there are many) , a place where Tom spent many days of his youth and an area where he and Carrie have a nice little get away from the rat race down here. Cinco de Mayo

Buenos Dias

Here a recipe for toastadas:

you’ll need :

1 lb turkey burger
1 lb of ground beef
1 tsp salt
1 onion
5 cloves garlic
5 jalopenas
1/2 of each red, yelow, green pepper
4 mushrooms
4 tbls of chili powder
1 tsp cumin
1 red stripe

corn tortillas, salsa, cheese (lettuce olives sour cream tomatoes optional)

proceed by browning the meats with salt, onions(diced), garlic(shredded), peppers(juliened),jalopenas(sliced) and seasoning adding mushrooms last

after browning add beer and evaporate while stirring

toast tortilla in toaster oven 5 mins or so (or fry in oil)

top with meat cheese salsa etc serve

Pan Fried Salmon and Vegetables

OK, Here’s a simple recipe co-opted from Jamie Oliver, you’ll need :

4 salmon fillets
1 potato
peppers (we used 5 jalapenos, 1/2 of each of green, red, yellow)
5 mushrooms
1 zuchini
1 carton of grape or cherry tomatoes
1 yam or sweet potato
onion and garlic (optional)
ten or so fresh green beans
butter, olive oil, veg. oil, salt pepper
1 or 2 cups of broth, wine or dressing

OK here we go, start a chunk of butter and some oil in a large fry pan
peel and dice, salt and pepper the potato(onion and garlic if using) and yam then into the pan over medium heat
then add cut green beans, then juliened peppers and zuchini and finally the sliced mushrooms, the potatoes and green beans need about 15 minutes before adding the broth

prepare the salmon by scoring the skin side 2 or  3 times with sharp knife, rub in salt and pepper then coat the skin side with olive oil. preheat a skillet(no oil needed in pan) big enough for 4 fillets. Add your broth to the vegetable medley if you haven’t yet. place salmon skin side down on hot skillet then season the flesh side and olive oil before flipping about 4-7 minutes per side depending on thickness, heat and desired doneness. add cherry tomatos to vegetable and broth, before flipping salmon. Arrange vegetable on a plate, top with salmon , flesh side up and enjoy.

SUNDAY

Went to my spot…… my swing in the back 1/4 (acre) where the natural lights flows free and I can see…. like a 40 year old again…. Spent some time reading ‘Jacque Costeau’s Almanac’ It’s a GREAT book published in 1981 Wayy!! ahead of it’s time environmentally, delving into single topics in the current chapter such as : a banana, a paperclip, a hamburger, paper, coal and other ordinary items. They are explored in depth in their own sections from all perspectives : historically, production wise, economically, politically, health wise and for their environmental wake. I HIGHLY recommend this book based just on that chapter alone. It’s availiable at both www.amazon.com and www.bn.com for a buck 99 + S&H. get yours today !!

hmmmm… went for about a 5 mile bike ride to the library gonna have to work my way up to 100 a day to get to cali in 20 days don’t know about them rockies though… hmm anyway the library had FREE !!!! Museum passes to be checked out and used within a week. Well they do have free WI_FI but i was a little disappointed in their selection of non-fiction DVDs and CDs so I ended up with Bill Clinton’s ‘Giving’ (see kiva below) on audio CD and  ’Jamie’s Kitchen’ (aka the naked chef) on dvd. I got my obligatory Star Bucks sample at krogers on the way back. ..Passed up 3 pc monitors and a microwave that were roadside refuse, but hey I was on my bike.

Anutha Saturday Night and…….

I ain’t got nobodee…. oh wait wrong blog that’s sam cooke’s blog I think, Me I got somebody and I’m eatin pretzels and dip(I made about a week ago for after work my last day but nobody came to eat it) It’s ok I’m drown’n’ my tears with some Stone Mill Pale Ale the dip was softened cream cheese(1 pkg) 1 teaspoon of wasabi powder and a dash of habenaro sauce called Coyote’s Howl I think mine was only a buk thirty tho. Let’s see you wanna hear owen talk click here : http://www.youtube.com/user/mikeups Poor Owen is sufferin though, he’s congested, teething and gassy(from movin to solid food just a day or so ago), I think, the old triple threat.
